Haskap Coffee Cake

Ingredients

1 1/2 cups all purpose flour,

1/4 cup sugar

2 1/2 teaspoons baking powder,

1/2 teaspoon salt,

1/4 teaspoon ground allspice,

1/3 cup melted butter,

1 large egg,

2/3 cup milk,

3/4 cup Haskap jam

Instructions

HEAT oven to 200c. Spray 8- or 9-inch square baking pan with no-stick cooking spray. COMBINE flour, sugar, baking powder, salt and allspice in medium bowl.

Add butter, egg and milk. Mix vigorously until well blended.

POUR half of batter into prepared pan; spread preserves evenly over batter.

Top with remaining batter.

COMBINE topping ingredients; mix until crumbly.

Sprinkle over top of coffee cake.

Bake 20 to 25 minutes or until toothpick inserted in centre comes out clean

TOPPING 

1/4 cup firmly packed brown sugar,

2 tablespoons flour,

1 tablespoon butter,

1/4 cup sliced almonds (sprinkled last)

Haskap Barbecue Sauce

Ingredients

  • 1 tablespoon butter

  • 2 teaspoons onion finely chopped

  • 1 teaspoon garlic crushed

  • 1/2 teaspoon Srirachaor Tabasco sauce

  • 2 tablespoons bourbon

  • 250 ml (1 cup) haskap berries

  • 25 ml (2 tablespoons) cider vinegar

  • 2 tablespoons brown sugar

  • 1 1/2 teaspoons molasses

  • 1 pinch allspice

  • 25 ml (2 tablespoons) maple syrup

Instructions

  1. Heat butter over medium heat.

  2. Add onion and garlic and stir until just cooked.

  3. Add remaining ingredients.

  4. Bring sauce to a boil.

  5. Reduce heat and simmer for 10 minutes.

  6. Optionally, you may force the sauce through a sieve if you want it smooth or you can leave it chunky
